Cole Slaw
Process in a food processor or grate with a grater or slice with a large knife:
5-6 c of cabbage
& put in a bowl.
Add:
1 T salt
& toss.
Let sit for 1 hr.
Put:
1 c raw cashews
or 3/4 c slivered almonds
1/2 t onion powder
1/2 t garlic powder
1/2 t parsley
1/2 t celery seed
1/2 t dill
1 1/4 t salt
3 T lemon juice
1 t virgin olive oil
2 T honey
1 c water
in a blender & blend for 1 - 2 min.
Put in a large bowl.

Process in a food processor or grate with a grater:
2 c of carrots
& pour into the large bowl of sauce & stir.
Then rinse & drain the cabbage with a strainer to remove the salt.
Blot with paper towels until dry.
Pour into the large bowl of sauce & toss.
Serve
or refrigerate in an airtight container for up to 3 days.
