Nectarine / Pear Dish




with pears
(Can be made the day before.
Let cool & refrigerate overnight.
Warm up in the morning.)
(To keep pears from becoming stringy or grainy, let them ripen, get soft, at room temperature before putting them in the refrigerator)
Preheat oven at 350º
Put:
1 1/2 c diced fresh or frozen (thawed)
nectarines, pears, or peaches
(to save your teeth, check each
peach slice & cut off any seed
pieces that cling to the peach slices)
1 c whole grain rice, steel cut oats
or
kamut, spelt or oat groats
(ground in a coffee grinder)
1 c rolled oats
1 c mashed fresh ripe bananas
3/4 - 1 c pecans (taste for freshness)
1/4 c unsweetened
shredded coconut or flakes
1/2 t coriander (when using peaches)
1/4 t ginger powder
1 t salt
1/3 c pure maple syrup
7 c water
in a glass pan or casserole dish & stir.
Bake uncovered at 350º for 1 1/4 hr.
Take out & stir.
Continue baking at 350º for 30 - 45 min. more.
Stir & serve
or cool down & refrigerate in an airtight container for up to 3 days.
