Pinto Barley Stew

Sort, rinse, & soak for 7 - 24 hours:
1 c pinto beans
5 c water

Rinse & drain.
Put in a pot.

Add:
1 bay leaf
1 t salt
5 c water

to the pinto bean pot & bring to boil.
Cover & simmer 45 min.

After the 45 min, add:
2 c chopped carrots
1/2 c chopped onion
1 c chopped celery
1 pressed garlic clove
1/2 t celery flakes
1/2 t parsley flakes
1/2 t turmeric
2 t salt more (the barley needs it)
a little over 1 1/2 c (15 oz. can) tomato sauce,
or 3 finely chopped tomatoes
1 c whole grain barley
2 c water more (3 - 4 c more for a thinner consistency)

to the pot & simmer 50 min. more
Discard bay leaf.


Serve
or cool down & refrigerate in an airtight container for up to 3 days
or freeze.
