Sweet Potato Greens
Preheat oven at 350º
Put:
10 c fresh or frozen kale
or collards, thawed
3 1/2 c diced sweet potatoes
3 T tarragon
2 T basil
2 1/2 t salt
3 c water
in a casserole dish & stir.
Bake at 350º for 1 1/2 hrs.
Add:
2 T lemon juice
1 - 2 t coconut oil (optional)
to the dish & stir.
Serve
or cool down & refrigerate in an airtight container for up to 3 days
or freeze.
