(Can be made the day before.
Let cool and refrigerate overnight.
Warm up in the morning.)

Preheat oven at 350º
Put:
1/2 c pitted dates
1 1/2 c sliced ripe bananas
(or 1 c mashed)
2 c water
in a blender & blend for 10 sec.
Pour in a casserole dish.

Add:
1 c whole grain teff
1 c whole grain rice or steel cut oats
or
kamut, spelt or oat groats
(ground in a coffee grinder)
1/2 c sliced almonds
1 bay leaf
3/4 t salt
4 c water
to the casserole dish & stir.

Bake uncovered at 350º for 1 hr.

After the 1 hr., take out & stir.
Then continue baking at 350º for 45 min. more.

After cooking 45 min. more, stir & discard bay leaf.

Serve
or cool down & refrigerate in an airtight container for up to 3 days.

Can freeze, but will need to be thawed, then put in a pot with a little water or nut milk & heat on med. high while stirring for 3 - 5 min.
